Kale and Blackberry Salad

Blackberries are coming into season here in Texas. We have wild dewberries, a small rather hard blackberry cousin, growing all over the farm. Soon our big blackberry patch down the hill will start fruiting. We sure are hoping for some good berries, but we need more rain for them to grow big and juicy like the blackberries that have started showing up in the grocery store.

And yippee! Our local store has massive, plump, dribble-down-your chin blackberries on sale right now for only 87¢ a container. Needless to say I stocked up!

I am currently eating according to the Trim Healthy Mama plan, so I was thrilled to see that among this past week’s Build A Menu THM choices were recipes for Kale and Blackberry Salad and Blackberry Muffins! Naturally I made both.

THM-S-Kale-Blackberry-Salad

Ingredients

  • 4 cups kale (baby kale is most tender, but you can use full size too, just use the leaves and give the stalks to your goats. Oh wait, you don’t have goats? 😉 )
  • 1 cup blackberries (either fresh or frozen)
  • 1/2 an avocado, cubed
  • 1 cup crumbled feta cheese
  • 4 Tbsp lemon juice (about two small lemons)
  • 3 Tbsp olive oil (I used garlic olvie oil… mmmm)
  • salt and pepper to taste

Directions

1) On two large dinner plates, divide and arrange the kale, blackberries, avocado and feta cheese.

2) For the dressing, mix the lemon juice, olive oil and salt and pepper in a small bowl or glass.

3) Top each salad with the dressing.

Of course if you are serving this to the whole family as a side, just toss it all in a bowl. We had it with some grilled chicken. And in case you are wondering, the goats loved the kale stalks.

This delicious salad is a refreshing change from the usual romaine and tomatoes. The tangy lemon dressing is balanced with sweet blackberries and creamy avocados.

You'll need...
  • 4 cups kale
