It probably goes without saying that Abbie and I love to cook. Even on days when we are all in a hurry, a good hour gets spent in the kitchen, making food and cleaning up. We mostly eat at home and we like to eat well.

We both love to concoct our own recipes. This is an incredibly practical way to be creative! We need to eat, so why not eat delicious, beautiful food? But on those hectic days when we are racing from breakfast through schoolwork to lunch and off to choir or PE or crafting or park day or…. Well, that is when I really really appreciate our friends at Build A Menu.

If you have been reading Blossoms and Posies for a while, you know that we have created a good number of recipes especially for kids over at Build A Menu. And even before we started this blog, I reviewed Build A Menu on my other blog, Joyful Mama. I have been a subscriber to the Build A Menu service for over two years now, since they first launched. Yep, in internet time that means I am beyond loyal.

You see, even though I love to create in the kitchen, I am also a very busy mama, and sometimes I just need a recipe in front of my face to follow. And while I could hunt on the internet or through my bookcase filled with cookbooks, I need simple some weeks. So before I go shopping, I run down their huge weekly list of recipes for the grocery store I shop at, click on those that look good and fit our way of eating, print them out with a shopping list, and I am set for the week!

And the recipes? DELICIOUSNESS! I am serious, when I first started cooking Build A Menu recipes, my husband and kids would gush over the meal, and I would just say “Build A Menu again!” They are BAM’s greatest fans. Of course I still create recipes, and of course I still cook our old favorites. But Build A Menu in my back pocket has been a lifesaver countless times over the past few years.

I could go on and on, like about how this actually is a service that is designed to help you save money (which it does!) by working recipes around store sales. Every single recipe shows me how much it costs to buy all the ingredients at my store, which helps me stay within budget. Or how a portion of the proceeds supports orphan care (the owners are adoptive moms.)

Okay, enough gushing. Let’s talk about ham ‘n’ egg cupcakes!

Abbie is fit and lean and lovely. I am in my mid-forties and getting more pillow-like as the years tick by. Heheh. So I decided it was time to take myself in hand and get serious about eating healthily. I have been following the Trim Health Mama plan for the past three weeks and I am in absolute culinary heaven! I can eat yummy food and stay on plan. And oh my word, Build A Menu has Trim Healthy Mama recipes! For real! A lot of THM recipes!

Recently I made ham ‘n’ egg cupcakes for breakfast. I had a very happy family (the kids asked for seconds and thirds), stayed on plan (these are an “S” recipe for THM eaters), and thought they looked so purrrdy that I snapped a bunch of photos. And while this blog is not about a specific way of eating, I got to thinking… maybe other soft-middled mamas like me might be interested in this recipe that made the family happy and allowed Mama to stay on plan.

So I asked Karee and Lisa, the sisters who are the masterminds behind Build A Menu, and they gave me permission to share it with you! Woohoo! Here ya go!

Ham ‘n’ Egg Cupcakes

Ingredients

  • 6 slices Deli ham (I got super thin ham on sale, so used two pieces, laying them crosswise)
  • 6 eggs
  • 1 Tbsp heavy cream
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 Tbsp green onion, minced
  • 1/3 cup cheddar cheese, shredded
  • 1/2 tsp marjoram (optional)

Directions

Spray a 6 cup muffin tin with nonstick cooking spray. Carefully line each muffin cup with 1 slice deli ham. In a medium bowl beat eggs, cream, salt and pepper until frothy. Gently stir in green onion, marjoram and cheese until well combined. Spoon about 1/2 cup egg mixture into each muffin tin and bake at 375 degrees for 20 to 25 minutes or until eggs are slightly puffed and set. Run knife around sides to loosen and remove to serve.

These were sooo easy. Really don’t take much longer than preparing scrambled eggs, though they do take longer to cook.  I was worried they would stick and be hard to get out but I had no problem at all just popping them out. And they look so fancy! I doubled the recipe for the five of us, and we still had a few left over as an easy snack.

How cute would these be for Easter breakfast? YUM!

This recipe works for low carb diets, Trim Healthy Mama (this an an S meal!), gluten free and probably a bunch of others.

Easy, delicious and so pretty - a fancy egg dish for just a few extra minutes work.

You'll need...
  • 6 slices Deli ham
  • 6 eggs
  • 1 Tbsp heavy cream
  • ¼ tsp salt
  • ⅛ tsp black pepper
  • 1 Tbsp green onion, minced
  • ⅓ cup cheddar cheese, shredded
  • ½ tsp marjoram (optional)
Here's what to do...
