Kale and Blackberry Salad (Trim Healthy Mama - S)

This delicious salad is a refreshing change from the usual romaine and tomatoes. The tangy lemon dressing is balanced with sweet blackberries and creamy avocados.
You'll need...
  • 4 cups kale
  • 1 cup blackberries (either fresh or frozen)
  • ½ an avocado, cubed
  • 1 cup crumbled feta cheese
  • 4 Tbsp lemon juice (about two small lemons)
  • 3 Tbsp olive oil
  • salt and pepper to taste
Here's what to do...
  1. On two large dinner plates, divide and arrange the kale, blackberries, avocado and feta cheese.
  2. For the dressing, mix the lemon juice, olive oil and salt and pepper in a small bowl or glass.
  3. Top each salad with the dressing.
  4. Can be served in a bowl as a side dish.
