Shepherd’s Pie

If you get our newsletter, you’ve already heard about Pi Day and that we like to celebrate it because, well… pie!

But maybe Pi Day is new to you, so let us educate. You see, pi is a mathematical constant usually rounded to 3.14. It’s a pretty important number in the world of numbers. So when some clever fellow realized we have a 3.14 on the calendar (aka March 14), Pi Day was born.

To celebrate Pi Day you could recite pi. Abbie knows pi to 50 digits. This guy knows Pi to 100,000 digits. Can you imagine?

But the one thing you should make sure to do is eat pie!

We sent out instructions for Mini Chocolate Pies in our newsletter yesterday (leave us a comment if you’d like that recipe.) And we made both Bird’s Nest Pie and Mini Chocolate Kiss Pies for Build A Menu recently, both very respectable pie options. Don’t forget our Pumpkin Pie recipe!

For this post we thought we’d share a dinner pie. It doesn’t really look like a pie, but it is called a pie, so good enough! And it is good enough, which is why we all enjoy it. We divvied up the jobs for this collaborative Shepherd’s Pie.

Ingredients

2 lbs potatoes
3 T butter
1/2 c grated sharp cheddar
1/2 c milk
1 lb frozen peas and carrots
1 lb ground beef
1 onion, chopped
2 T flour
2/3 c beef broth
1 T melted butter for top of potatoes

Instructions

1. Sauté onions and beef together in skillet until beef is browned

2. Boil large pot of water for potatoes

3. Peel potatoes and cut in 1 inch chunks

4. Boil potatoes until tender

5. Drain potatoes and add 3 tablespoons butter, 1/2 cup cheese and 1/2 cup milk. Mash

6. Drain grease from beef. Add broth and flour, and stir until mixed.

7. Pour frozen veggies into meat mixture and stir

8. Grease 2 quart ceramic casserole dish

9. Put beef/veggie mixture in the bottom of casserole and press down. Add mashed potatoes to cover meat mix.

10. Smooth out top of potatoes and covered with melted butter

11. Bake at 375° for 20 minutes or until mashed potatoes are golden
