Peaches are in season at the height of the summer, so now is the ideal time to stock up while they are on sale. In addition to enjoying them fresh, we like to freeze them for yummy smoothies all year long. And now we have a new recipe to add to our peachy repertoire! I was in the mood to whip up peach muffins the other day, but did not have a recipe. I did have cream cheese though. Mmmmm. So I played around and came up with this recipe, which I am calling Peaches and Cream Muffins. It is […] Read more »
Patriotic Salad
After sharing the Kale and Blackberry Salad in May, a friend of a friend made a version that included raspberries. Those pretty red berries got me to thinking… how could I make a red, white and blue salad? So I played around, and just in time for Independence Day, here it is! Starting with a base of spinach, you’ll layer on strawberries, blueberries and feta, then toss them with a simple lemon juice based dressing (you might recognize the flavor from the blackberry salad.) A yummy and light addition to your patriotic celebration! Patriotic Salad Print Prep […] Read more »

Yummy Grilled Chicken Marinade
Here is a quick chicken marinade that you can throw together to make your chicken taste fantastic! What’s a marinade? A marinade is a liquid in which you soak raw meat or vegetables. Marinades infuse food with flavor, and tenderize meat. Tough meats can be marinated for as long as a whole day and night, but usually you don’t marinate chicken for that long. A few hours will do the trick! Salt can toughen meat, so we’ll add that after the meat is cooked instead of putting it in the marinade. After your chicken has taken its flavor bath you […] Read more »
100% Whole Wheat Bread
For years I searched for a 100% whole wheat bread recipe that was actually edible. All the recipes I tried either turned out like bricks, or required part white flour. I was so happy when I found this recipe! A dozen years later, I no longer remember my original source, but I’ve made the recipe our own with unique modifications. – Mrs. Brown This bread is delicious. My favorite way to eat it is cut in thick slices, fresh out of the oven, with butter and cheese. It’s nice to know what ingredients are in it, and that it doesn’t […] Read more »
Texas Sized Cowboy Cookies
Cowboy Cookies are big-as-your-hand wild-west concoctions full of chewy crispy chocolatey yumminess. These are basically oatmeal chocolate chip cookies with pecans and coconut and a loooooot of butter. Oh yeah! I originally got this cookie recipe out of the newspaper… way back in the days when the internet was not my primary source of news. As a result I can’t properly attribute it. I’ve been making Cowboy Cookies for the last fifteen years or so. They are a big hit with guests (and the pecans make them oh-so-Texan.) Now, I don’t especially advise you to eat a Cowboy Cookie while […] Read more »
