Once again I am gob-smacked by Build A Menu.
This week we are trying to cook from the pantry and freezer, so I knew a few of our favorites would be on the menu – we had all the ingredients. But I was still in the mood for something new, particularly snacks. I headed off to Build A Menu to plan. And what to my wondering eyes did appear…?
Almond Crackers. With just three ingredients. Made in the microwave.
What?!
Y’all, these crackers are so simple, and surprisingly delicious and crispy. Mmmmmm! I served them with cheese, but my hubby said he thinks they’d also go well with salsa. Now I am dreaming of them with onion dip….

Microwave Almond Crackers
Ingredients
- 1 1/4 cups almond flour
- 2 eggs (whites only)
- 1/4 tsp salt
Directions
- Whisk egg whites and salt together, then stir in almond flour. (If you need a recipe for which to use the yolks, I highly recommend this THM cinnamon roll, my current breakfast obsession.)
- Scrape dough onto parchment paper, cover with another piece of parchment paper, and roll out as thinly as possible.
- Microwave for 2 minutes (I turned my rotating microwave plate upside down so that the crackers wouldn’t get spun and smooshed.)
- Remove from microwave and slice into tidy crackers, or in my case, randomly run a pizza cutter along the dough.
- Microwave another 4 minutes or until crackers are crunchy and slightly browned. I found that a few of mine were a little extra thick and had to be put back in after the others were removed.
- These crackers get more crispy as they cool. Store at room temperature.

Just wanted say that this is the best “cracker” recipe I have seen so far. I have wasted a lot of hours searching.
Can this be modified by topping with sugar and cinnamon?
I am very glad you like it! You could certainly add cinnamon sugar if you’d like, but it would no longer be low carb or on plan for Trim Healthy Mama. Still gluten free though! If you wanted to keep it low carb and THM friendly, I would suggest using xylitol instead of sugar.
