Fall brings cooler weather and pumpkins galore! These pumpkin oat chocolate chip cookies have cranberries and pecans hidden in them too, a sweet harvest of yumminess!
Harvest Cookies
2 cups white whole wheat flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 cup butter (1 stick) – softened
1 cup white sugar
1/2 cup brown sugar
2 eggs
1 cup pumpkin puree
2 teaspoons vanilla
2 cups oats
1 cup pecans
2 cups chocolate chips
1 cup dried cranberries
Heat oven to 350°. Mix flour, baking powder, baking soda, cinnamon and salt in a medium-sized bowl.
In a separate large bowl, beat butter on medium speed until smooth and creamy. Add white and brown sugars and beat. Add eggs one at a time while beating.
Beat in the pumpkin and vanilla until completely combined. Stir in flour mixture. Add chocolate chips, oats, pecans, and cranberries. Drop tablespoon sized drops onto an ungreased baking sheet.
Bake cookies for 15 minutes, or until the edges are lightly browned. Take the cookies off the cookie sheet and cool on cooling rack.
Makes four dozen cookies.
