This is our favorite recipe for cornbread. Cornbread can be dry, but this recipe is nice and moist, with a slight sweetness to it. Yum! You can buy boxed cornbread mix, but cornbread from scratch is much better, and it isn’t hard at all.
Homemade Cornbread
2 eggs
1/4 cup sugar
1 cup flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2/3 cup cornmeal
1/2 teaspoon salt
1 cup plain yogurt
1/4 cup butter, melted
Preheat oven to 400° F. Beat eggs in a mixing bowl and add sugar. Mix well. In a separate bowl, whisk flour, baking powder, soda, cornmeal, and salt. Add the dry ingredients alternately with the yogurt to the egg mixture. Stir in cooled, melted butter. Bake in a greased 10-inch cast-iron skillet for 15-25 minutes. Watch closely after the first 15 minutes to ensure it doesn’t burn.
