Cinnamon Apple Cake - a great cake for company!

Apple cake. I will admit it is not the first thing I think to make when I have a lot of apples. Cinnamon applesauce is definitely the number one most requested apple dish in the Brown household!

But when I do make Cinnamon Apple Cake, everyone wonders why I don’t do it more often. I have been making this layered circular apple cake recipe for 25 years and believe me, it’s a keeper! Moist cake with a slight hint of citrus is layered with fresh apples and cinnamon sugar. Everyone always wants more than one piece.

I have also made a gluten free Cinnamon Apple Cake using a gluten free flour mixture. One of my favorites is Namaste’s Gluten Free Blend, which I buy at Costco.

You can serve Cinnamon Apple Cake with whipped cream or ice cream, but I rarely do – it stands on its own! And it is a great dessert for when you have company!

You'll need...
  • 1½ cups sugar
  • 1 cup oil or melted butter
  • 4 eggs
  • 3 cups flour
  • 2½ teaspoons vanilla
  • 3 teaspoons baking powder
  • ¼ cup orange juice
  • 4 or 5 apples, peeled and sliced about ⅛" thick
  • FOR CINNAMON SUGAR:
  • 3 tablespoons sugar
  • 2 teaspoons cinnamon
Here's what to do...
  1. Preheat oven to 375°
  2. Beat 1½ cups sugar with oil, eggs, and vanilla in a large bowl.
  3. In a medium bowl, combine flour and baking powder.
  4. Add flour mixture to sugar mixture, along with orange juice.
  5. Mix 3 tablespoons sugar and 2 teaspoons cinnamon in a small bowl to make the cinnamon sugar.
  6. Grease a tube pan (angel food cake pan) with butter.
  7. For a cinnamon-y crust, you can sprinkle a little of the cinnamon sugar on the sides, bottom and center of the buttered pan. Otherwise, lightly sprinkle some flour on the butter.
  8. Pour ⅓ of the batter into the bottom of the pan and gently spread with a rubber spatula.
  9. Place a layer of apples on top of the batter then sprinkle apples with ⅓ of the cinnamon sugar.
  10. Repeat twice, for a total of three times, ending with a layer of apples and cinnamon sugar.
  11. Bake in 375° oven for an hour.
  12. Check with a cake tester, toothpick or thin knife. When the implement comes out clean the cake is ready.
  13. Cool and serve by itself, or with vanilla ice cream or whipped cream.
