Strawberry Chocolate Heart Muffins

Fresh strawberries, whole grain, and some chocolate on top - muffin yumminess!
You'll need...
  • 1-3/4 c white whole wheat flour
  • ⅔ c brown sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¼ tsp nutmeg
  • ½ tsp cinnamon
  • 2 eggs
  • 6 oz strawberry yogurt
  • ¼ c. milk
  • ¼ c. melted butter
  • 1 tsp vanilla
  • 1¼ c. chopped strawberries
  • mini chocolate chips
Here's what to do...
  1. In a large bowl, combine the flour, brown sugar, baking soda, salt, nutmeg and cinnamon. In a smaller bowl, whisk the eggs, yogurt, milk, butter and vanilla together. Stir the wet mixture into your dry ingredients just until moistened. Gently fold in the strawberries.
  2. Put paper liners in a muffin tin. Place a spoonful of batter in each paper. Then place two marbles, one on top of the other, between each liner on the muffin tin. Continue to add batter until all the liners are evenly filled. Sprinkle miniature chocolate chips on top of each muffin.
  3. Bake at 375° for 18-20 minutes. Cool for a few minutes before carefully moving the muffins from the pan to a cooling rack. Be very careful of the marbles; they will be hot! Makes 12 muffins.
