Strawberry Chocolate Heart Muffins

Made with fresh strawberries and strawberry yogurt, these muffins are sure to please the berry lovers in your life! The post includes suggestions for using marbles to turn a round muffin into a heart shape!

Abbie says: “These are simple to make and extreeeemely delicious. They didn’t turn into hearts very well, but other than that everything seemed to go pretty smoothly.”

Mrs. Brown says: “When Abbie saw a picture of someone using a marble to make heart shaped cupcakes she knew we had to try it. So we took a strawberry muffin recipe, adapted it a bit, and popped marbles in the muffin tin. As you can see, the muffins rose a bit over and around the marbles, so that the dimple at the top of the heart is not as noticeable. Next time we are going to try stacking two marbles to see if that makes it more obvious. We like to use white whole wheat flour because it is whole grain, but is still quite light. King Arthur is the brand we buy.”

Strawberry Chocolate Heart Muffins

1-3/4 c white whole wheat flour
2/3 c brown sugar
1 tsp baking soda
1/4 tsp salt
1/4 tsp nutmeg
1/2 tsp cinnamon
2 eggs
6 oz strawberry yogurt
1/4 c. milk
1/4 c. melted butter
1 tsp vanilla
1 1/4 c. chopped strawberries
mini chocolate chips

In a large bowl, combine the flour, brown sugar, baking soda, salt, nutmeg and cinnamon. In a smaller bowl, whisk the eggs, yogurt, milk, butter and vanilla together. Stir the wet mixture into your dry ingredients just until moistened. Gently fold in the strawberries.

Put paper liners in a muffin tin. Place a spoonful of batter in each paper. Then place two marbles, one on top of the other, between each liner on the muffin tin. Continue to add batter until all the liners are evenly filled. Sprinkle miniature chocolate chips on top of each muffin.

Bake at 375° for 18-20 minutes. Cool for a few minutes before carefully moving the muffins from the pan to a cooling rack. Be very careful of the marbles; they will be hot! Makes 12 muffins.
