Ham 'n' Egg Cupcakes

- 6 slices Deli ham
- 6 eggs
- 1 Tbsp heavy cream
- ¼ tsp salt
- ⅛ tsp black pepper
- 1 Tbsp green onion, minced
- ⅓ cup cheddar cheese, shredded
- ½ tsp marjoram (optional)
- Spray a 6 cup muffin tin with nonstick cooking spray.
- Carefully line each muffin cup with 1 slice deli ham.
- In a medium bowl beat eggs, cream, salt and pepper until frothy.
- Gently stir in green onion, marjoram and cheese until well combined.
- Spoon about ½ cup egg mixture into each muffin tin.
- Bake at 375 degrees for 20 to 25 minutes or until eggs are slightly puffed and set.
- Run knife around sides to loosen and remove to serve.
