Ham 'n' Egg Cupcakes

Easy, delicious and so pretty - a fancy egg dish for just a few extra minutes work.
You'll need...
  • 6 slices Deli ham
  • 6 eggs
  • 1 Tbsp heavy cream
  • ¼ tsp salt
  • ⅛ tsp black pepper
  • 1 Tbsp green onion, minced
  • ⅓ cup cheddar cheese, shredded
  • ½ tsp marjoram (optional)
Here's what to do...
  1. Spray a 6 cup muffin tin with nonstick cooking spray.
  2. Carefully line each muffin cup with 1 slice deli ham.
  3. In a medium bowl beat eggs, cream, salt and pepper until frothy.
  4. Gently stir in green onion, marjoram and cheese until well combined.
  5. Spoon about ½ cup egg mixture into each muffin tin.
  6. Bake at 375 degrees for 20 to 25 minutes or until eggs are slightly puffed and set.
  7. Run knife around sides to loosen and remove to serve.
